Sous Chef - Japanese Restaurants

Hotel Okura Amsterdam, an international five-star hotel is looking for a Sous Chef for its prestigious Japanese restaurants. These restaurants are part of the absolute top segment of gastronomy and offer a unique culinary experience to our demanding guests. In this role, you will work in an environment where excellence is the norm. Our Japanese restaurants are known for their refined dishes, exquisite ingredients, and impeccable service. As a Sous Chef, you will be the sparring partner of the head chef in determining the menu and creating new recipes (with associated calculations/pricing), and you will actively come up with suggestions based on your own market insights.

    You will be responsible for:

  • Process efficiency of the section (quantities used, spillage, timely readiness for serving)
  • Quality of preparation (satisfaction of head chef/guests)
  • Compliance with regulations (recipes, work methods, HACCP, presentation)
  • Number of adopted proposals
  • Insight into guest needs
  • Sufficient stock
  • Timely orders
  • Proper storage of items
  • Following the FIFO principle

What We Ask

  • You have MBO level 4 working and thinking level
  • Proficiency in Dutch or English
  • Demonstrable knowledge of basic cooking techniques
  • Knowledge of products/ingredients and the composition of the menu
  • You can coach/instruct: shows interest in others and what occupies them; knows how to motivate and enthuse; gives trust and space to do things independently and make mistakes; sets an example for others;
  • You have the ability to take initiative: starts on their own, does not wait; has confidence in their own abilities and quality; looks ahead in their own work and takes action when necessary; picks up on things (even outside their own work) if they can
  • You are quality-oriented: corrects immediately if requirements are not met; asks for feedback from guests about quality and service; comes up with suggestions for improvement
